West Coast Rock Lobster – Whole Cooked Frozen (Jasus Lalandii)

 Lobster of a certain size are taken from live storage tanks after 3 days purging then drowned, cooked, washed, chilled and drip-dried, wrapped in clear plastic sheets, blast frozen, graded and packed into trays of 2.5kg net mass. Frozen product in trays are packed in 4 trays per master carton (master carton = 10kgs) and date-coded. It is then transferred to cold storage.
